Overnight Oats with Haskap Berries

We all love quick and simple. Whether it is a quick and simple workout, a road trip with your whole family and mother in law, deleting an ex from your life or a recipe. Some things should just be quick and simple.


ENTER OVERNIGHT OATS STAGE LEFT. You need minimal ingredients, minimal effort, and a fridge. This is the easiest, tastiest recipe since last weeks recipe. I know I usually go all out and yes, I love to cook! I love to create! But when you are battling two teething babies, its just easier to have things done sometimes.


Its creamy, full of flavour, and actually healthy. The oats put your heart first, and with all of the fiber you are putting your gut health second! Plus the toppings are endless! Want chocolate? Add some dark chocolate chunks. Want extra coffee? Add some! Coconut? Do it.


Personally I add in a TON of Haskap berries. Now, let me touch base on these little magical ugly berries full of life. Packed with more anthocyanins, Polyphenols, bioflavanoids, and ORAC than any berry out there, they are just out there living their best lives as a fountain of youth. Those big words I just mentioned are all anti oxidants. Its the reason why we drink wine, eat blueberries, do face masks, etc.


In short, they are the Stan Lee of berries. The Master of all things Anti oxidant.


I wont keep you guys waiting. Lets get to an easy recipe!

Makes/ Portions:

4 servings


Ingredients

  • 1 cup Milk of your choice (almond, soy, coconut, etc), or water.

  • 1 cup rolled oats, or steel cut oats

  • 2 tbsp chia seed

  • 4 tbsp greek yogurt *optional

  • Sweetener of choice *to taste

  • Haskap berries *Fresh or frozen

  • 1 tbsp honey

  • 1 tbsp coconut *Optional

  • Additional toppings of your choice (Apple, banana, maple syrup, cocoa powder, or mango are great options)


Instructions:


Add One Cup of oats to One cup of liquid of choice. Add in coconut, chia seeds, and yogurt. Mix it until the only lumps left are from the chia and oats. Close the container and set it in the fridge overnight.


When you are ready to eat, add your choice of toppings along with the Haskap berries and let it sit for a few minutes. Add to a bowl or just dig in!
