I Wish, I Wish For A Waffle Dish

Some days are harder than others. Some days I don't want to put in any effort when it comes to a meal. And this week was no different. Just kidding. It's been this way for a while and the #SkipTheDishes driver and I are BFF's now. But that gets expensive...


So what did I do? I went into my cupboard and looked for something...anything that was #easy. But something that my 15 month old twins would also eat.


But here's the thing. I hadn't gone grocery shopping, and I had basic ingredients at home. And then I spotted it. Boxed pancake mix! The good old fashioned Compliments brand from Safeway!


I read the list of what I needed; oil, an egg, and water. No thanks. I can do the oil, but water? I wanted something a little different but still tasty and just because its a pre mixed box doesn't mean it has to be blah....right?


I opted to add vanilla, milk, pearl sugar and sour cream. You heard me...sour cream. The full fat sour cream that is so thick you don't know if its coming or going. I'm of course talking about the gold standard of sour cream. Gay Lea is the way to go, guys. This stuff is full fat and perfect for baking. Or in this case, bringing boxed pancake mix to life.



But back to it! So...follow the pancake mix as you normally would. Instead of water, use the sour cream and milk, with a splash of vanilla and add the pearl sugar. Cook as you normally would; either as pancakes or waffles! I always choose waffles, because they are basically a cake with flavor pockets with a good crispy surface.


I couldn't stop there. I decided to take some of my frozen Haskap berries from #RosyFarms and make a quick simple syrup with rhubarb for the top. Haskap berries are something else guys. They are tart and sweet with a delectably rich tone. They have become one of my favorite berries to incorporate into recipes as they pair so well with everything. Cheese? Yes. Beef? Even better. WAFFLES OH MY GOD.


So...lets get to the recipes! Shall we? This will be a two part recipe, and do with it what you will. But trust me...Haskap it up.

Sour Cream Waffles with Haskap Sauce.


Ingredients:

-boxed pancake/waffle mix

-oil

-milk

-sour cream

-eggs

-2 tsp vanilla

-sugar (Pearl sugar is great but if you don't have it, use regular sugar)


-1 cup frozen Rosy Farm's haskap berries

-1/2 cup Rhubarb

- 1/2 - 1 cup brown sugar (adjust to desired sweetness)

-1/2 tsp fresh lemon zest

-1/2 tsp fresh orange zest

-2/3 cup water

- 1/4 tsp salt

- pinch of either cinnamon, nutmeg

-pinch of cocoa powder


** You can add some white chocolate curls like I did on top for extra flavor.


1) Follow the instructions for the pancake mix. If you choose to use milk instead of water, add 4 tablespoons of sour cream to a measuring cup and then add your milk so you still get the exact amount of milk you need by volume. Add in your vanilla and whisk until the clumps of sour cream are small.


2) Add your dry ingredients to a bowl and then add the wet, following the mixing instructions for your pancake mix. Cook accordingly.


Rhubarb and Haskap sauce:


1) Add all of your ingredients to a pot and cook over medium low until the fruit begins to break down, and sugar is fully dissolved. Cover, reduce heat and simmer for 10 minutes until your desired consistency is reached.


2) Serve either hot or cold (Can be kept in the fridge for up to two weeks or frozen in cubes for a year)


3) Revel in the fact that you made a kick ass, fancy looking meal in under 30 minutes with minimal dishes. Pour yourself a glass of wine, and relax because you are #Badass in the kitchen.
